Just a demonstration using chives of how the following knives cut: My mom's 9" Cutco chef knife (which I sharpened before this video as it was pretty dull to begin with as it sees frequent heavy use by my mom) My 8" Shun chef knife (which has never been sharpened yet and sees frequent use) My 5-1/2" Kyocera Kyotop Ceramic Santoku (which has never been sharpened yet and sees infrequent use)

This is one of the most ridiculous tests I’ve ever seen. I’ll agree that Shun has great knives, but these aren’t out of package testing. You can’t compare your MOTHERS cutco to Shun that we don’t know the age of. And- quite honestly, there’s a clear difference in pressure put on the knives.
AND oh, Chef knives are NOT meant for any type of slicing. “We call this one the Rock and Roll knife because you just rock and roll it’s great for dicing, mincing and chopping”

440A is crap steel. Rust resistance is all it has going for it, it dulls quickly, and won’t take as fine of an edge as 440 steels with higher carbon content (440 B,C). Furthermore, anybody who knows anything about knives would laugh at the suggestion that 440A is a superior steel to VG10. VG10 and S30V are considered the modern “super steels” due to their remarkable hardness, durability, and ability to take a fine edge, while still maintaining rust resistance. BTW, I’ve sold $1,000’s of Cutco.

Cutco’s handle is far too thin for a person of medium or greater hand size to achieve a good grip, and thermo-resin handles are very cheap to make, though not as cheap as polypropylene. Properly laminated wood handles, or resin impregnated wood handles will not soak up any liquid; don’t just believe the crap Vector feeds you in their sales rep training.

dude you dont even have your facts right.. cutco’shandle is as ergonomic as you can get, and is made out of the same materials bowling balls and football helmets are made from.. not to mention that they ARE hand made. your wood handles will soak up any material including blood in its handle which is unsanitary. cutco’s handles are nearly indestructible . and btw… why the fuck would you be slicing with chef knives? they are used for chopping errrrr. and cutco’s steel is 440 A if you didnt

Cutco knives have nothing close to the quality of materials or craftsmanship of Shun knives. Cutco knives use a molded thermoplastic handle which is not ergonomic (despite their claims) and the edge is just merely adequate for cutting and somewhat soft to hold an edge well. Classic series Shun handles are wood and hand worked with much better fit and tolerances than Cutco while being very ergonomic. A Shun’s edge is both exceptionally sharp while also very durable; holds its edge very well.
